How to Make Fluffy Turkish Bread

Step 1: Activate the Yeast
In a large bowl, mix the warm milk, warm water, sugar, and yeast. Stir lightly and let sit for 5–7 minutes, until a foamy layer appears on top, showing the yeast is active.

Step 2: Form the Dough
Stir the olive oil and salt into the yeast mixture. Gradually add the flour, mixing until a soft, slightly sticky dough begins to come together.

Step 3: Knead Until Smooth
Transfer the dough to a floured surface and knead for 8–10 minutes by hand (or about 5 minutes using a stand mixer) until smooth, stretchy, and elastic.

Step 4: First Rise
Place the dough in a lightly greased bowl, cover, and let it rise in a warm area for about 1 hour, or until doubled in size.

Step 5: Shape and Finish
Gently press the air out of the dough and divide it into two equal portions. Shape each into a round or oval. For a traditional finish, whisk the egg yolk with milk, brush it over the surface, and sprinkle with sesame or nigella seeds.

Step 6: Bake Hot and Fast
Preheat the oven to 220°C (425°F). Bake for 10–12 minutes, until the bread puffs up and turns lightly golden.

Step 7: Rest Before Serving
Remove from the oven and cover with a clean kitchen towel for a few minutes. This helps retain moisture and keeps the bread soft.
